201: Pudín de Pan y Queso (Bread Pudding with Cream Cheese)

Ingredients:



1 cup bread, cut into pieces
14oz can condensed milk
1 cup water
6 eggs
2 Tablespoons butter, melted
1/2 cup golden raisins
1 Tablespoon vanilla
6oz cream cheese, softened
1 cup sugar

1. Preheat the oven to 350 degrees.
2. In a large mixing bowl, place the bread pieces and pour the condensed milk over the top.
3. Fill the can of condensed milk with the cup of water and pour over the bread.



4. Add the eggs, melted butter, raisins and vanilla and mix well.



 5. Add the softened cream cheese and finish mixing.
6. In a saucepan, heat the sugar and stir constantly with a wooden spoon until all the sugar has melted and formed into a caramel color.
7. Pour the melted caramel in the bottom of a large baking dish and swirl around the bottom to fully coat the pan with the caramel.
8. Pour the bread pudding ingredients into the caramel lined pan.



9. Place the bread pudding pan into a larger dish and fill up the sides, about 1", with hot water (Baño María).
10. Bake for an hour and a half at 350 degrees.



Makes 12 servings.

192: Pan de Jengibre (Gingerbread)

Ingredients:
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon cinnamon powder
1/2 teaspoon salt
1 stick butter
1/2 cup sugar
1 egg
3/4 cup molasses
1/2 cup milk
1/2 cup dry white cooking wine


1. Preheat the oven to 350 degrees.
2. Grease a square, 8" baking pan.
3. Sift the dry ingredients.


4. Beat the butter with the sugar, egg, molasses, milk and cooking wine. Mix well.


5. Add the wet to the dry.


6. Mix the ingredients well and pour into the greased baking pan. (The photo below shows a rubber baking mold that does not require greasing.)


7. Bake for 45-50 minutes, or until a knife comes out clean after testing for doneness.


Makes 16 servings.

Mango Nut Bread

This recipe is courtesy of my cousin, Anna.


Ingredients:


2 mangos, pureed
1 cup AP flour
1 cup whole wheat flour
1/2 cup sugar
1 tsp baking soda
1/4 tsp cinnamon
1/2 tsp salt
1/4 cup walnuts
1/4 coconut flakes
1 large egg
2 Tbsp butter


1. Preheat oven to 325 degrees.
2. Mix wet ingredients first.
3. Mix dry ingredients second.
4. Add wet and dry ingredients and mix well.
5. Bake for 45-55 minutes.
