Ingredients:
1 1/4 cup flour
1 1/2 teaspoon double acting baking powder
1 Tablespoon sugar
1/2 teaspoon salt
1 egg
1 1/4 cup milk
2 Tablespoons butter
1. Sift the dry ingredients.
2. Beat the egg with the milk and melted butter.
3. Add the wet to the dry ingredients and mix well.
4. Heat a greased skillet and pour in the pancake batter, forming 3" - 4" circles, approximately. (note: this was my first try at making pancakes with Nitza's recipe. Please excuse the non-circles.)
5. When you see bubbles form throughout the top of the pancake, flip to the other side to finish cooking.
Makes approximately 16 medium-sized pancakes.
