274 : Arepas de Arroz


1 1/4 cup flour
1 1/2 teaspoon double acting baking powder
1 Tablespoon sugar
1/2 teaspoon salt
1 egg
1 1/4 cup milk
1/2 cup cooked white rice
2 Tablespoons butter

1. In a blender, mix the dry ingredients.

2. Add the egg,  rice with milk and melted butter to the dry ingredients.

3. Blend well and scrape down the sides of the blender with a spatula a few times.

4. Pour the pancake mix onto a greased skillet, looking for bubbles to form on the top of the pancake.

5. Flip.

Makes approximately 12-16 medium-sized pancakes.
